Saturday was going to be a big night for me. I wouldnt get enough sleep from the friday shift because i had to wake up early to make somethings for my sisters/mums bbq which was happening at 12:30pm.
I made buko pandan filippino dessert and then white sangria at ates house. Heres how to make buko pandan:
BUKO PANDAN
Slice one canned grass jelly into french fry shapes
Put in bowl and add 2 tablespoons of condensed milk
then 1 can of evaporated milk
Mix
Eat
Pretty easy. Then i had to go to IGA to buy ingredients for sangria. IGA didnt have mint and mangos so i had to really improvise. i just got a whole bunch of good looking fruit. heres what my sangria was made of:
WHITE SANGRIA
1 Bottle of Saviugion Blanc
500ml Dry gingerale
Stawberries
Passionfruit
Kiwi
Pear
Orange
It tasted good to me :) ate was eating all her fruit. she and jack had a few glasses. we played Gestures (or sharades) and the girls remained the undefeated championships! wooo. Rexel is a top guesser.
i had to take a quick shower at ates then rush off to catch the train at keilor plains. my trial started at 6pm but being nervous me i got into the city at 5:30pm. i made a stop at Melbourne Central level 3 toilets for a quick touch up and checked out my all black outfit for this trial. ew my hair was still wet.
i got there 5 minutes early and spotted the bar manager in the VIP/back bar. the people surrounding her thought i was her sister
'what's happening here? did u bring your sister to work??'
just because we're asian doesn't mean we're related! i wasnt offended, i think that about white people. i had to fill out some paper work and then had to get into uniform, which was black with chinese buttons that gave me hell in the change room.
The cool punk bar manager with multiple facial and neck peircings, wrist and chest tattoos and bleached hair, showed me around the bar. The Persian Rooms had a minimum $2,500 spend, the Shanghai Lounges $800 and the Johnnie Walker Blue Lounge a $1,500 spend. Each booked lounge comes with their personal plastic hostess in a short red dress.
The VIP or upper deck area is guarded by hostess and security. Only the owners, friends, family, rich people, celebrities or invited guests are allowed in. The upper deck overlooks the entire bar. The big bosses stand at a small opening at the VIP bar, right infront of me. The pressure was on nut most of the time i was doing nothing bcoz there simply was not much to do!
The manager put me in charge of dispense. Which was to make the orders that prints out from the receipt machine. fuck these people do a lota wet pussy shots. its like the only thing they drink. i would do 4, then 5, then 1, then 10, then 5 and the last batch was 20. 20! i didnt have enough shot classes i had to wait 5minutes for them to go through the dryer. i learnt a couple new shots:
666 DROP
(similar to a jaga bomb)
1 shot vodka top with raspberry cordial
dropped into a tall glass with
15 ml pineapple and
15 ml Lift
COWBOY
2/3 Butterscotch schnapps
1/3 Baileys
I learnt white spirits and liquers go in tall glasses, and dark spirits in short. Straws for tall glasses. one of the big bosses drinks and only drinks out of a $120 tumbler. If we drop it we're fucked. If we see it empty and lying around we're to rescue it from potential damage, rinse with water and placed in its velvet box home in a cupboard beneath the register.
He drinks Chivas 18 yo on the rocks, the chivas bottle is placed next to the bottle of basic spirits - ready for serving. I had to serve him, he wanted to test him. Did he think I'd forget to put a serviette down before i laid the glass down? because i didn't. He smiled when he saw that. I picked up the special glass with two hands, filled it with ice to the imaginary line Claire showed me, then poured a shot of the Chivas 18 yo. I placed it on the serviette and asked him:
'Anything else?'
He smiled at said no. I think he likes me. He dresses in a fine grey suit and leans over the bar, to view his empire. The crowds are so tightly packed out there, the bar line mixes with the floor tables and people are getting demanding to have their money exchanged for drinks. he must be happy. He also watches us work, and me, but sometimes i see him smile at me. prolly because im only learning and he thinks its cute. his caught me out a couple of times for making a mistake, but he tells other people to tell me off. its probably not his job.
the other owner, likes the company of 22 yo girls. he buys them pretty cocktails. i saw him dancing with one. it was a funny front humping motion. hehe. ew. he's bald. he asked me for strawberries cut in half. i went to the cocktail station and put them in a cup. The manager told me to apologise for not having it in a silver plate - we ran out. And to ask him
'is this okay?'
he took it without saying anything. Did he hear me? I make the drinks for the floor girls to take to the VIP customers. and one of them was pretty bitchy when she was getting stressed out. shes a nice person, being supportive of my first day and teaching me how to do a 666 drop shot. but the demon horns come out when the customers waited longer than a few minutes. she was rude and sarcastic on two occasions because i didnt get her order right. she was watching me like a hawk. take a chill pill bitch. why didnt i tell her that?
The bar staff were all really nice. I guess most bar staff are nice. They were patient with me asking many questions, even though they were reallll flat out serving. They made me feel welcomed :) And the floor girls were really nice too. I was working with this japanese bar girl, she was more clueless than me. I was helping her out more than she was helping me. haha but she was lovely, and humble and thankful.
The customers i new would be 30 year old, suit/tie wearing, cocktail drinking, wealthy business caucasian people. before my shift, i predicted i will feel intimidated because I, am not upper class, fancy or elegant. I burp, fart, cut up my tshirts, dirty my sneakers, wear 2nd hand vintage items, and cut my hair mullet style. how am i going to act infront of these people?

She knows her friends are behind her. They just giggle and pull her in the opposite direction.
After a short break outside i push to the front of the line to enter the bar again. The 5 security guards didnt stop me but someone did. I heard a massive:
HELLLOOO???
from the front of the line. I turn around and so did everyone else there. Some old lady dressed in a green short dress. She turn a freaky 180 degrees from her standing position. She said
"you can at least say hi to me, you cant just walk in without letting anyone know"
I work here
"yeah okay you work here but you gotta let me know who you are. I cant have people coming in and out you know.
"its my first day"
"oh thats okay" fake smile
What a total BITCH. I'm guessing it was one of the hostess's. I shoulda ripped off her plastic lips and left her to bleed to death in the alley way.
The dj mixes pop from all genre's. here the crowd roar to Usher's 'YEAH!' and Bon Jovi songs. The Dj's wears a suit. I was sad about the music. I missed Ty and his tshirt/jeans wearing self rocking some soul funk and hip hop unknown but pleasant to my ears. I missed everything jwow.
I think i did well because they asked me to come back for training next week. I agreed to it on the spot. but upon reflection im not so sure. I've come to a decision that I dont want to work in a place like that. I dont want to worry about what these rich and old people think of me. I dont wanted to be intimidated or feel inferior. I dont want to watch my back for bitches.
I'm going to call the bar manager tmrw to let her know. Wish me luck.
